Frohlich Named Conference Center Executive Chef at Gaylord National


Holger Frohlich (foto from Frohlich’s Web site) has been named the executive chef for the Conference Center at the Gaylord National Resort and Convention Center. Gaylord is strengthening their Miami connections with another chef from the Sunshine State. You can see from his Web site that he’s been the executive chef for Celebrity Cruises in Miami with annual sales of $100 million/year. Before that he was the assistant executive chef at the Mirage in Las Vegas. For my readers who may or may not understand hotel food and beverage, the conference center is the profit center … it will allow the Old Hickory Steakhouse to run a profit/loss sheet that can support a wine cellar and a cheese cave. With the Frohlich announcement today, Gaylord has set the key chef leaders of the culinary mission for the property — many more names will follow but none so critical as Frohlich and Wolfgang Birk.
